Heritage Genetics & Zero-Stress Harvest
At Mini Shire Farm, our beef program is built on quality, transparency, and a commitment to animal welfare. While we offer a variety of heritage breeds and finishing options, our standard remains the same: cattle that are raised with care on our Oregon pastures.
The On-Farm Difference We utilize a mobile on-farm butcher for our harvests. This means that for the majority of our cattle, they never leave the farm. By eliminating the stress of transport and loading, we ensure a "zero-stress" environment that directly impacts the tenderness and quality of the meat.
Our Genetics & Sourcing
Typically Farm-Raised: Most of our beef is born and raised right here, featuring our Brahman herd bull crossed with Jersey, Hereford, Shorthorn, or Wagyu.
Hand-Selected Sourcing: To meet high demand, we occasionally hand-select premium heritage animals from trusted local farms or auctions to finish on our pastures.
Custom Finishing: We offer both Grass-Fed and Custom-Finished options. Please note that availability varies by breed; for example, our Wagyu and Bragyu crosses are typically grain-finished to ensure the high-level marbling these breeds are famous for.
How to Reserve
Due to high demand, we typically take reservations and deposits several months in advance. We sell exclusively by the Whole and Half Share.
The Two-Step Payment Process
When you buy a share of a live animal, your costs are split to keep pricing transparent:
To the Farm: You pay the farm for the animal based on the hanging weight plus a harvest fee. This covers the cost of the animal, its feed, and the mobile butcher’s service to the farm.
To the Butcher: You pay the Cut & Wrap fees (~$1/lb) directly to the local butcher shop. We work with several excellent local shops; because we use a mobile harvester, we can often work with a specific butcher of your choice if requested in advance.

Our shares are reserved on a first-come, first-served basis. Joining our list ensures you are notified as soon as a steer is ready for finishing and a harvest date is set.
