If you think you know what pork tastes like, our Milk-Fed Meishan will change your mind. Known globally as the "Wagyu of Pork," the Meishan is an ancient heritage breed prized for its incredible intramuscular marbling and complex, tender flavor profile.

By raising our pigs on a specialized milk-fed diet, we enhance these natural traits to create a finished product that is creamy, succulent, and lightyears beyond anything found in a grocery store.

The Meishan Difference

  • The "Wagyu" Marbling: Unlike modern lean breeds, Meishans naturally produce intense marbling. This "good fat" melts during cooking, self-basting the meat for an effortless, juicy finish.

  • True Red Meat: Our pork isn't "the other white meat." Meishan pork is a deep, vibrant red—more akin to a fine steak than commercial pork.

  • The Milk-Fed Finish: We supplement our pigs' diet with fresh dairy from our herd. This "Milk-Raising" process softens the fat, lending it a clean, sweet finish and a velvet-like texture.

Whole Share Reservations

To ensure our customers receive the full range of specialty cuts—including the prized leaf lard, jowls, and belly—we sell our Meishan pork exclusively by the Whole Share. A whole Meishan share typically requires about 6-8 cubic feet of freezer space—roughly the size of a small chest freezer.

  • Target Hanging Weight: 150 – 180 lbs.

  • The Yield: Expect a beautiful variety of chops, roasts, shoulder, ribs, belly, and ham, plus the highest-quality lard for baking.

  • Custom Cutting: You will work directly with the butcher to specify your preferred cuts and thickness.

Pricing Policy: Due to the specialty nature of the Meishan breed and our milk-based feeding program, pricing is determined by hanging weight at the time of harvest.
